Green Olives in Brine
Description
Olives processed with the Sevillian method which gives them a delicate taste with a compact and crunchy flesh.
Ideal to be enjoyed as snacks or to pair with Martini aperitifs.
Specification
Ingredients: Olives, water, salt; acidifiers: citric acid, tartaric acid, ascorbic acid.
Olives with a strong taste, of a green colour, processed with the "Castelvetrano method".
The size is to be defined at the time of processing.
Unpasteurized product.
The product has a 120 day shelf life; it should be kept in a cool place, away from heat sources.
Chemical-Physical characteristics: 5,0 ≤ pH ≤ 6,0 | 4,0 ≤ NaCl% ≤ 4,5.
Packaging
Packaging method: product packaged in a 4-4.5% salt brine.
Packaging type: Plastic food grade pouches.
Available formats: 150 g and 400 g
Available processing:
Whole, Pitted, Broken, Rings, Barchetta.
Controls
Each phase of the processing is continuously monitored by our internal technicians, experts in quality control, from the arrival of the raw materials, to the storage and processing phase.
Microbiological analyses and chemical-physical checks are carried out at all stages of production and on all production batches in our internal laboratory and random checks are carried out by qualified external laboratories.
